It’s so fun to host my buddy, Leslie Gould.
I met Leslie about eight years ago during a marketing seminar and instantly liked her. How could I not? She’s true, talented, and one of the genuinely kindest people you’ll ever meet.
Here’s a quick description of her latest novel:

Williamsburg, Virginia, 1704: What did they eat?

My husband and I visited Williamsburg, Virginia in July of 2015 to research My Sister’s Prayer, the second in the Cousins of the Dove series, co-authored with Mindy Starns Clark. The novel is a timeslip story that takes place both in present day Richmond and in 1704 Williamsburg. Historical Williamsburg is set in 1776 so, through every step of my research, I questioned what had changed in those seventy-two years.
One of my big concerns was food. What did colonists eat in 1704? I discovered that Williamsburg was designed to include big residential lots that allowed for large gardens, orchards, and some livestock. Nearly everyone had a vegetable garden, fruit trees, and at least chickens.
Much of the historical thread of My Sister’s Prayer takes place in an inn, and a tremendous amount of food was needed to feed the many guests. The onsite garden, orchard, and livestock were supplemented by more produce, dairy products, and meat from nearby farmers, along with fowl, wild game, and fish provided by local hunters and fishermen.
Here are some of the main dishes I came up with for My Sister’s Prayer: venison stew, soufflé, savory cheesecake, blue fish in cream sauce, roasted duck, and rabbit game pie. As far as desserts, apple tansy (or tansey) was a favorite. The story is set in the fall so, yes, there were lots of apples!
Below is a modified recipe (originally from the 1700s) for Apple Tansey:
- 3 Pippin apples (or Granny Smith)
- 3 tablespoons butter
- 4 eggs
- ¼ cup of cream
- pinch of nutmeg
- 2 tablespoons granulated sugar
- powdered sugar for garnish
Heat broiler. Core the apples and then slice into thin rounds. Fry in butter, turning once, in a cast iron skillet or non-stick pan for about 5 minutes. Beat the eggs with the cream, nutmeg, and sugar and pour mixture over apples. Cook over medium heat until the bottom solidifies, then place under broiler for 3 minutes until egg mixture is cooked through. Sprinkle with powdered sugar.
The first recorded recipe of Apple Tansey is in The Compleat Housewife: or, Accomplished Gentlewoman’s Companion by E. Smith, 1727.
(I’ve made this and, if I do say so myself, it’s quite good! So fun to fix what colonial women cooked 300 years ago!)
